Seriously, The Best Healthy Turkey Chili

A seriously delicious and healthy turkey chili that's packed with flavor and nutrition. This hearty one-pot meal is perfect for busy weeknights and makes excellent leftovers.
Ingredients
- 2 teaspoons olive oil
- 1 yellow onion, chopped
- 3 garlic cloves, minced
- 1 medium red bell pepper, chopped
- 1 pound extra lean ground turkey or chicken (99%)
- 4 tablespoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt (plus more to taste)
- 1 (28-ounce) can diced or crushed tomatoes
- 1 1/4 cups chicken broth
- 2 (15 oz) cans dark red kidney beans, rinsed and drained
- 1 (15 oz) can sweet corn, rinsed and drained
- Toppings: cheese, avocado, tortilla chips, cilantro, sour cream
Instructions
Heat olive oil in large pot over medium-high heat. Add onion, garlic, and red bell pepper. Sauté for 5-7 minutes, stirring frequently, until softened.
Add ground turkey to the pot, breaking it apart with a wooden spoon while cooking until no longer pink. Stir in chili powder, cumin, oregano, cayenne pepper, and salt. Cook for about 20 seconds until fragrant.
Add diced tomatoes, chicken broth, kidney beans, and corn. Stir to combine and bring to a boil.
Reduce heat to low and simmer uncovered for 30-45 minutes, until chili has thickened to your desired consistency. Taste and adjust seasonings as needed.
Serve hot with desired toppings such as shredded cheese, diced avocado, tortilla chips, fresh cilantro, or sour cream.
Notes
- Freezer-friendly: Cool completely before transferring to freezer-safe containers. Freeze up to 3 months.
- Slow cooker adaptation: After step 2, transfer everything to slow cooker and cook on low 6-8 hours or high 3-4 hours.
- For extra heat, increase cayenne pepper or add diced jalapeños.
